For the Cod
1 pound cod fillets, cut into 4 pieces
2 cloves garlic, minced
2 tablespoons freshly squeezed lemon juice
1/4 cup unsalted butter, softened
2 tablespoons chopped fresh parsley

For the Roasted Brussels Sprouts (optional)
1 pound Brussels sprouts, trimmed and halved
2 tablespoons olive oil

For the Cod
1. Preheat oven to 400°F (200°C).
2. Line a baking sheet with parchment paper or aluminum foil.
3. Place the cod pieces on the prepared baking sheet.
4. In a small bowl, mix together garlic, lemon juice, and softened butter.
5. Brush the garlic butter mixture evenly over the cod pieces.
6. Season with salt, pepper, and parsley.
7. Bake in the preheated oven for 12-15 minutes or until the fish is cooked through and flakes easily with a fork.
For the Roasted Brussels Sprouts (optional)
1. Toss Brussels sprouts with olive oil, salt, and pepper in a bowl.
2. Spread the sprouts on a baking sheet in a single layer.
3. Roast in the oven with the cod for 20-25 minutes or until tender and caramelized.

1. Divide the cooked cod among four bowls.
