6 organic eggs

1/4 cup low-fat milk (or almond milk for dairy-free)

1/4 cup diced onion

1/4 cup diced green bell pepper

1/4 cup cooked bacon or lean ham (optional but adds flavor & protein)

Salt and pepper to taste

1. Preheat your oven to 180°C (350°F) or use your portable Weber grill with a lid for outdoor cooking.

2. Grease a non-stick muffin tin or use silicone liners.

3. Add diced veggies and bacon into each muffin cup.

4. In a mixing bowl, whisk the eggs, milk, salt, and pepper.

5. Pour the egg mixture into the muffin cups, filling them about 3/4 full.
