Honey Garlic Chicken with Sweet Potatoes and Green Beans

 

 

 

 

 

 

 

 

 

Ingredients:

4 boneless, skinless chicken breasts

¼ cup honey

¼ cup soy sauce

3 cloves garlic, minced

1 tablespoon olive oil

2 large sweet potatoes, peeled and cubed

2 cups fresh green beans, ends trimmed

1 teaspoon paprika

1 teaspoon dried thyme

Salt and black pepper, to taste

 

Directions:

Prepare the Marinade:

In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and pepper.

Marinate the Chicken:

Place chicken breasts in a dish or bag and pour half of the marinade over them. Let sit for at least 30 minutes or cover and refrigerate up to 8 hours.

Roast the Sweet Potatoes:

Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with a bit of olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes.

Add Chicken & Green Beans:

Remove sweet potatoes from the oven. Push them to one side, add marinated chicken and trimmed green beans to the sheet. Drizzle remaining marinade over the chicken.

Bake Everything Together:

Return pan to the oven and bake for another 20–25 minutes, or until chicken is cooked through and vegetables are tender.

Serve & Enjoy:

Plate the chicken with sweet potatoes and green beans. Spoon extra pan juices over top if desired.
