For the Pork Chops:
4 bone-in pork chops
2 tablespoons olive oil
4 cloves garlic, minced
¼ cup honey
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard

For the Mashed Potatoes:
4 large russet potatoes, peeled and diced
½ cup milk
3 tablespoons butter
Salt and pepper to taste

Directions:
Prepare the Mashed Potatoes:
In a large pot, add diced potatoes and cover them with water. Bring to a boil and cook for about 15 minutes, or until the potatoes are tender when pierced with a fork.
Drain the potatoes and return them to the pot. Mash them with butter, milk, salt, and pepper until smooth and creamy. Keep warm.
Cook the Pork Chops:
Heat olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper, then cook for 4-5 minutes per side, or until golden brown and the internal temperature reaches 145°F (63°C).
Remove the pork chops from the skillet and set aside.
Make the Honey Garlic Sauce:
In the same skillet, reduce heat to medium and add minced garlic. Sauté for 1-2 minutes until fragrant.
Add honey, soy sauce, apple cider vinegar, and Dijon mustard to the skillet. Stir well and cook for 3-4 minutes, until the sauce thickens slightly.
Finish the Dish:
Return the pork chops to the skillet and spoon the honey garlic sauce over the top. Let them simmer in the sauce for 2-3 minutes to absorb the flavors.
Serve the pork chops on a plate with mashed potatoes and drizzle the sauce over both for added flavor. Garnish with fresh parsley.
