 Ingredients:

โ€“ Salmon: Grilled with honey, Dijon mustard, and black pepper

โ€“ Vegetables: Steamed asparagus & zucchini , roasted cherry tomatoes & red onion

โ€“ Eggs: Soft-boiled eggs

โ€“ Side: Dijon herb vinaigrette

 

 Instructions:

1. Prepare the Salmon:

โ€“ Season the salmon with a mixture of honey, Dijon mustard, and black pepper.

โ€“ Grill until cooked through and slightly caramelized.

2. Steam the Vegetables:

โ€“ Steam asparagus and zucchini until tender but still crisp.

3. Roast the Vegetables:

โ€“ Toss cherry tomatoes and red onion with olive oil, salt, and pepper.

โ€“ Roast in the oven until caramelized and juicy.

4. Cook the Eggs:

โ€“ Soft-boil eggs to your preferred doneness (about 6-7 minutes for a runny yolk).

5. Assemble the Dish:

โ€“ Plate the grilled salmon, steamed asparagus, zucchini, roasted tomatoes, and red onion.

โ€“ Add the soft-boiled eggs on the side.

โ€“ Drizzle everything with the Dijon herb vinaigrette.
