Irish Seafood Chowder

 

 

 

 

 

 

Ingredients:

1 lb mixed seafood (shrimp, scallops, fish, etc.), chopped
2 tbsp butter
1 onion, chopped
2 garlic cloves, minced
2 celery stalks, chopped
2 large potatoes, peeled and diced
4 cups fish or vegetable broth
1 cup heavy cream
1/2 tsp thyme
Salt & pepper to taste
1/4 cup fresh parsley, chopped

Instructions:

Cook vegetables: In a large pot, melt butter and sauté onion, garlic, and celery until softened (5-7 minutes).
Add potatoes and broth: Stir in potatoes, broth, thyme, salt, and pepper. Simmer for 15-20 minutes until potatoes are tender.
Add seafood: Add seafood and cook for 5-7 minutes until cooked through.
Finish: Stir in heavy cream and cook for another 3-5 minutes.
Serve: Garnish with parsley and serve hot. Enjoy!
