Instructions
1. Prep the ingredients
Slice your bell peppers and onion into strips. Have the sausages ready to go.
2. Brown the sausages
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the sausages and cook until browned on all sides (about 5–7 minutes).
They don’t need to be fully cooked yet — just get that nice golden crust.
Remove sausages and set aside.
3. Cook the veggies
In the same skillet, add the remaining 1 tablespoon of olive oil.
Toss in the sliced peppers and onion.
Sprinkle with garlic powder, oregano, salt, and pepper.
Cook for 8–10 minutes, stirring occasionally, until the veggies are soft and starting to caramelize.
4. Combine and simmer
Return the sausages to the skillet.
Reduce heat to low, cover, and let everything cook together for another 10–12 minutes, until sausages are fully cooked through (internal temp: 160°F / 71°C).
5. Garnish and serve
Sprinkle with fresh basil or parsley for a pop of color and flavor.
Serve as-is for a low-carb option, or pile everything into crusty bread or hoagie rolls for a proper Italian sandwich.
