4 cod fillets about 6 oz each
4 tablespoons unsalted butter melted
2 tablespoons olive oil
3 garlic cloves minced
2 tablespoons fresh lemon juice about 1 lemon
1 teaspoon lemon zest
1 teaspoon paprika optional for a smoky flavor
1 teaspoon dried thyme or 1 tablespoon fresh thyme
Salt and black pepper to taste
Fresh parsley chopped for garnish
Lemon slices for garnish
Instructions
Preheat the oven: Preheat your oven to 400°F 200°C.
Prepare the lemon butter sauce: In a small bowl whisk together the melted butter olive oil minced garlic lemon juice lemon zest paprika if using thyme salt and pepper.
Prepare the cod: Pat the cod fillets dry with paper towels and place them in a baking dish. Season both sides lightly with salt and pepper.
Add the sauce: Pour the lemon butter sauce evenly over the cod fillets making sure they are well-coated. You can also tuck a few lemon slices around the fillets for extra flavor.
Bake: Bake the cod in the preheated oven for 12–15 minutes or until the fish is opaque and flakes easily with a fork. The cooking time will depend on the thickness of the fillets.
Garnish and serve: Remove the cod from the oven and garnish with fresh parsley and additional lemon slices if desired. Spoon some of the buttery sauce from the baking dish over the fish before serving.
