1️⃣ Bake the Potatoes:
Preheat oven to 425°F (220°C). Line a baking pan with parchment paper.
Rub potatoes with olive oil and sprinkle sea salt on all sides.
Place on the prepared pan and bake for 50-60 minutes, or until tender when pierced with a fork.
2️⃣ Prepare the Steak Bites:
While the potatoes are baking, trim excess fat from the steak and cut into 2-inch pieces.
Drizzle with 2 tablespoons of avocado oil and coat liberally with Cajun seasoning.
Heat a cast iron skillet (or regular skillet) over medium-high heat with 2 tablespoons avocado oil.
Add steak bites and sear for 2 minutes on one side without moving. Flip and cook for another minute.
Reduce heat to low, cook for 1 more minute, then push steak to one side of the pan.
Add 2 tablespoons butter and 1 tablespoon minced garlic, sautéing until fragrant. Toss steak bites in the garlic butter for another minute.
Transfer steak bites to a bowl and tent with foil to keep warm.
3️⃣ Make the Parmesan Cream Sauce:
In the same pan with residual butter and garlic, add 2 more tablespoons of butter and the remaining 1 tablespoon garlic. Sauté until fragrant.
Slowly whisk in heavy cream and bring to a gentle simmer for 3-5 minutes until slightly thickened.
Add red pepper flakes and Parmesan cheese, whisking until fully melted.
Taste and adjust with salt and black pepper as needed.
Remove from heat and stir in parsley and lemon juice.
4️⃣ Assemble & Serve:
Slice open each baked potato and fluff the inside with a fork.
Spoon steak bites over the potato.
Drizzle with Parmesan cream sauce and garnish with extra parsley.
Serve immediately and enjoy!
