Loaded BBQ Bacon Cheeseburger Potato Volcanos

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

4 large russet potatoes
1 lb ground beef
1 cup barbecue sauce
1 tsp onion powder
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
1 cup shredded cheddar cheese
8 slices bacon, cooked and crumbled
¼ cup sliced jalapeños (optional)
¼ cup chopped green onions

Instructions:

1. Preheat your oven to 400°F (200°C).
2. Wash the potatoes, poke them with a fork, and bake for 45–50 minutes until tender.
3. In a skillet over medium heat, cook the ground beef with onion powder, garlic powder, salt, and pepper until browned. Drain excess fat and stir in barbecue sauce.
4. Let baked potatoes cool slightly, then slice each in half lengthwise. Scoop out some of the flesh to form a volcano-like cavity.
5. Fill each potato half with the BBQ beef mixture. Press down gently and top with shredded cheddar cheese and crumbled bacon.
6. Return filled potatoes to the oven and bake for another 10–15 minutes, until cheese is melted and bubbly.
7. Remove from oven, garnish with jalapeños and green onions, and serve hot.
