Ingredients

3/4 cup all-purpose flour

2 tablespoons cornstarch

1/4 teaspoon baking soda

1/4 teaspoon baking powder

1 teaspoon salt

1/4 teaspoon sugar

3/4 cup cold water (add a little more if you want a thinner batter)

Optional: a pinch of paprika or onion powder for extra flavor

 

Instructions

1. In a bowl, whisk together the flour, cornstarch, baking soda, baking powder, salt, and sugar.

2. Add the cold water and whisk until smooth. The batter should be slightly thick but pourable.

3. Heat oil to 350°F (175°C).

4. Dip fish, chicken, or shrimp into the batter, let excess drip off, and fry until golden (usually 3–5 minutes).

5. Drain on paper towels and serve hot.
