Cook the Shrimp:

Bring a pot of salted water to a boil. Add the shrimp and cook until they turn pink and curl into a loose “C” shape (about 2-3 minutes).
Drain and immediately transfer the shrimp to a bowl of ice water to stop the cooking.
Once cooled, chop the shrimp into bite-sized pieces and transfer them to a large mixing bowl.
Prepare the Vegetables:

Add the sliced celery, chopped jalapeño, cucumber, avocado, onion, and cilantro to the bowl with the shrimp.
Make the Sauce:

In a separate bowl, whisk together the lime juice and zest, orange juice, tomato juice, tomato sauce, grated garlic, hot sauce, salt, and pepper.
Combine & Chill:

Pour the sauce over the shrimp and vegetables, stirring gently to combine.
Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Serve & Enjoy:

Serve cold with tortilla chips or saltine crackers. Garnish with extra cilantro and lime wedges if desired.
