Ingredients:

4 salmon fillets
2 tablespoons olive oil
1 cup fresh spinach
1/2 cup whipping cream
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
3 cloves garlic, minced
1 tablespoon butter
Juice of 1/2 lemon
Salt and pepper to taste

Sear the salmon:

Season the salmon fillets with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat.
Add the salmon skin side down and cook for 4-5 minutes on each side, until golden and crispy. Remove and reserve.
Prepare the Florentine sauce:

In the same pan, melt the butter and add the minced garlic. Cook for 1-2 minutes until fragrant.
Add the chicken broth and whipping cream, and bring to a simmer.
Add the parmesan cheese, lemon juice and spinach. Cook until the spinach wilts and the sauce thickens slightly.
Assemble the plate:

Place the salmon back in the pan and cook for 2 more minutes to coat it with the sauce.
Serve:

Serve hot, topped with the creamy Florentine sauce.
