Peach Cobbler

 

Ingredients

For the Filling
6 cups sliced peaches fresh, frozen, or canned
½ cup granulated sugar
¼ cup brown sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 teaspoon cinnamon
¼ teaspoon nutmeg
2 tablespoons cornstarch
For the Cobbler Topping
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
½ teaspoon salt
1 cup milk
½ cup unsalted butter melted
Instructions

Preheat oven to 375°F (190°C).
In a bowl, mix peaches with granulated sugar, brown sugar, cinnamon, nutmeg, vanilla, lemon juice, and cornstarch until well coated.
Spread peach mixture evenly into a buttered 9×13-inch baking dish.
In another bowl, whisk flour, sugar, baking powder, and salt.
Add milk and whisk until smooth, then stir in melted butter.
Pour batter evenly over the peaches without stirring.
Bake for 40–45 minutes until golden brown and bubbly.
Let rest 10–15 minutes before serving.

Notes
Best served warm with vanilla ice cream, whipped cream, or caramel.
Fresh peaches give the best flavor; thaw and drain frozen peaches well.
Canned peaches work—drain and reduce sugar.
Don’t overmix the batter.
Add spices like cardamom or ginger for deeper flavor.
Substitutions: Gluten-free flour 1:1 blend; almond/oat/soy milk; vegan butter; coconut sugar or monk fruit; swap peaches with berries, apples, or plums.
