1 ½ lbs ground beef
1 small onion, finely diced
1 small green bell pepper, finely diced
1 cup mushrooms, finely chopped
2 cloves garlic, minced
1 cup shredded provolone cheese (or mozzarella)
½ cup breadcrumbs
1 large egg
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika
½ tsp dried oregano
½ tsp garlic powder
½ cup beef broth
For the Topping:

1 cup provolone cheese, sliced or shredded
1 tbsp butter
½ small onion, sliced
½ small green bell pepper, sliced
½ cup mushrooms, sliced

Preheat oven to 375°F (190°C). Lightly grease a loaf pan or baking dish.
In a large skillet, heat butter over medium heat. Add diced onion, bell pepper, mushrooms, and garlic. Sauté for 3-4 minutes until softened. Remove from heat and let cool.
In a large mixing bowl, combine ground beef, cooled sautéed vegetables, breadcrumbs, egg, Worcestershire sauce, salt, pepper, paprika, oregano, and garlic powder. Mix until well combined.
Fold in the shredded provolone cheese, ensuring even distribution.
Shape the mixture into a loaf and place it in the prepared baking dish. Pour beef broth around the meatloaf to keep it moist.
Bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
While the meatloaf bakes, prepare the topping: In a skillet, melt butter and sauté sliced onion, bell pepper, and mushrooms until caramelized, about 5 minutes.
Remove the meatloaf from the oven and top with provolone cheese slices. Return to the oven for 5 minutes, or until the cheese melts.
Top with the caramelized onions, peppers, and mushrooms before serving. Slice and enjoy!
