Ingredients:

For the Red Velvet Cupcake Base:
1¼ cups all purpose flour
1 tbsp cocoa powder
½ tsp baking soda
¼ tsp salt
½ cup buttermilk
1 tsp white vinegar
1 tsp vanilla extract
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 tbsp red food coloring
For the Strawberry Cheesecake Swirl:
4 oz cream cheese, softened
2 tbsp granulated sugar
1 tsp vanilla extract
¼ cup strawberry puree or jam
1 tbsp flour

 

Instructions:

1️⃣ Preheat oven to 350°F (175°C) and line a 12-cup muffin tin.
2️⃣ In one bowl, mix flour, cocoa, baking soda, and salt. In another, combine buttermilk, vinegar, and vanilla.
3️⃣ Cream butter and sugar, then beat in egg and food coloring.
4️⃣ Alternate adding dry ingredients and buttermilk mix to the batter. Mix until smooth.
5️⃣ In a small bowl, beat cream cheese, sugar, flour, strawberry puree, and vanilla until creamy.
6️⃣ Fill each cupcake liner ¾ full with batter. Add a spoonful of cheesecake swirl and swirl gently with a toothpick.
7️⃣ Bake 18-22 mins until set and a toothpick comes out clean. Cool before serving.
