Roast Beef with Vegetables and Onion Gravy

3 lbs beef roast
2 tbsp olive oil
Salt and pepper to taste
1 large onion, sliced
3 garlic cloves, minced
4 carrots, chopped
4 potatoes, cubed
2 cups beef broth
1 tbsp flour (optional for thicker gravy)
Fresh thyme and rosemary sprigs

Preheat oven to 350°F (175°C).
Season the beef roast with salt and pepper.
In a large oven-safe pot, heat olive oil over medium-high heat. Sear the roast until browned on all sides.
Add onions and garlic, cook until soft. Place carrots and potatoes around the beef.
Pour in beef broth, add thyme, and rosemary.
Cover and roast in the oven for 2.5-3 hours, or until tender.
