Ingredients:

3 medium beets, roasted and cubed (or pre-cooked for convenience)

1 ripe avocado, diced

1/4 cup crumbled feta cheese

1/4 cup walnuts or pecans, toasted

1 large handful of mixed greens (such as arugula, spinach, or lettuce)

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1. Prep the Beets: If roasting yourself, wrap beets in foil and roast at 400°F (200°C) for 45–60 minutes, then peel and cube once cool.

2. Assemble the Salad: In a large bowl, combine mixed greens, roasted beets, diced avocado, feta cheese, and toasted walnuts or pecans.

3. Dress It: Drizzle with olive oil and balsamic vinegar. Toss gently to combine.
