1 lb shrimp, peeled and deveined
2 bell peppers (any color), sliced
1 small onion, sliced
2 cloves garlic, minced
1 tbsp ginger, minced (optional)
2 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tsp sesame oil
2 tbsp vegetable oil (for stir-frying)
Salt and pepper to taste
Green onions or sesame seeds for garnish (optional)
Instructions:
1. Prep: Pat shrimp dry and season lightly with salt and pepper. Prepare your veggies by slicing peppers and onion, mincing garlic and ginger.
2. Cook shrimp: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and stir-fry until pink and cooked through, about 2-3 minutes. Remove shrimp and set aside.
3. Cook veggies: In the same pan, add remaining 1 tbsp oil. Toss in garlic, ginger, and onion. Stir-fry 1-2 minutes until fragrant and slightly softened.
4. Add peppers: Add sliced bell peppers and stir-fry for another 3-4 minutes until they’re tender-crisp.
5. Combine: Return shrimp to the pan. Add soy sauce, oyster sauce (if using), and sesame oil. Stir everything together and cook for another minute or two so the flavors meld.
6. Serve: Garnish with sliced green onions or sesame seeds if desired. Serve hot with rice or noodles.
