Shrimp and Sausage Dirty Rice

 

 

 

 

 

 

 

 

 

Ingredients:

* 1 cup long-grain white rice
* 2 cups chicken broth
* 1 tablespoon olive oil
* 1/2 pound smoked sausage, sliced
* 1/2 pound shrimp, peeled and deveined
* 1 small onion, diced
* 1 green bell pepper, diced
* 2 celery stalks, diced
* 2 cloves garlic, minced
* 1 teaspoon Cajun seasoning
* 1/2 teaspoon paprika
* Salt and pepper to taste
* 2 green onions, chopped
* Fresh parsley for garnish

Instructions:

1. Cook the Rice: In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce heat to low, cover, and let simmer for about 15-20 minutes until the rice is tender and the liquid is absorbed. Set aside.
2. Prepare the Sausage and Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.
3. Cook the Vegetables: In the same skillet, add the onion, bell pepper, and celery. Sauté for about 5 minutes, or until the vegetables are softened. Add the garlic and cook for another minute.
4. Combine Ingredients: Return the sausage to the skillet and add the shrimp. Sprinkle in the Cajun seasoning, paprika, salt, and pepper. Cook until the shrimp are pink and cooked through, about 3-4 minutes.
5. Mix in the Rice: Add the cooked rice to the skillet and stir well to combine. Cook for another 2-3 minutes to heat everything through.
6. Garnish and Serve: Remove from heat, stir in the green onions, and garnish with fresh parsley. Serve hot.
