Ingredients:

โ€“ 1 lb shrimp, peeled and deveined
โ€“ 4 small red potatoes, quartered
โ€“ 2 ears corn, cut into thirds
โ€“ 1/2 lb smoked sausage, sliced
โ€“ 2 tbsp olive oil
โ€“ 1 tbsp Cajun seasoning
โ€“ 2 garlic cloves, minced
โ€“ Salt and pepper, to taste
โ€“ Fresh parsley, chopped (for garnish)
โ€“ Lemon wedges (for serving)

 

 Directions:

1๏ธโƒฃ Preheat Oven or Grill:
โ€“ Oven Method: Preheat your oven to 400ยฐF (200ยฐC).
โ€“ Grill Method: Preheat the grill to medium-high heat.

2๏ธโƒฃ Prepare the Ingredients:
โ€“ In a large bowl, combine the shrimp, quartered potatoes, corn pieces, and sliced sausage.
โ€“ Drizzle with olive oil and sprinkle with Cajun seasoning, minced garlic, salt, and pepper. Toss until everything is evenly coated.

3๏ธโƒฃ Assemble the Foil Packs:
โ€“ Tear 4 large pieces of aluminum foil.
โ€“ Divide the shrimp, potato, corn, and sausage mixture evenly among the foil pieces.
โ€“ Fold the foil over the ingredients and seal the edges tightly to form secure packets.

4๏ธโƒฃ Cook the Foil Packs:
โ€“ Oven Method: Place the foil packs on a baking sheet and bake for 25-30 minutes, or until the potatoes are tender and the shrimp are cooked through.
โ€“ Grill Method: Place the foil packs directly on the grill grates and cook for 20-25 minutes, turning once halfway through.

โ€“ Carefully open the foil packs (be cautious of the hot steam).
