Instructions:
1.Sauté the Aromatics:
Set your pressure cooker to the sauté function and add the olive oil.
Once the oil is hot, add the chopped onion and cook for 2-3 minutes until softened.
Add the minced garlic and red pepper flakes (if using), and sauté for another minute until fragrant.
2.Add the Tomatoes and Seasoning:
Pour in the crushed tomatoes and white wine (or chicken broth).
Stir in the dried oregano, dried basil, salt, and pepper.
Let the mixture simmer for 2-3 minutes to allow the flavors to meld together.
3.Cook the Shrimp:
Add the shrimp to the tomato sauce and stir to coat them well.
Close the lid of the pressure cooker and set it to cook on high pressure for 1 minute.
Once the cooking time is up, perform a quick release to release the pressure.
4.Finish with Fresh Herbs:
Open the lid and stir in the chopped fresh parsley.
Taste and adjust seasoning if needed.
5.Serve:
Serve the shrimp and tomato sauce over cooked pasta or rice.
