**Ingredients:**
– 1 lb shrimp, peeled and deveined
– 1 lb Andouille sausage, sliced
– 4 medium potatoes, diced
– 1 bell pepper, diced
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tbsp olive oil
– 1 tsp smoked paprika
– 1 tsp cajun seasoning
– Salt and pepper to taste
– Fresh parsley, chopped for garnish
**Directions:**
- Heat olive oil in a large skillet over medium-high heat.
- Add the sausage slices and cook until browned on both sides, about 5 minutes. Remove and set aside.
- In the same skillet, add the potatoes and cook until golden and crispy, about 10 minutes.
- Add the onion, bell pepper, and garlic to the skillet and sauté until the vegetables are soft, about 5 minutes.
- Return the sausage to the skillet, add the shrimp, smoked paprika, cajun seasoning, salt, and pepper. Cook until the shrimp are pink and cooked through, about 5 minutes.
- Remove from heat and garnish with chopped parsley before serving.
