Shrimp & Sausage Fried Potato Skillet

**Ingredients:**

– 1 lb shrimp, peeled and deveined

– 1 lb Andouille sausage, sliced

– 4 medium potatoes, diced

– 1 bell pepper, diced

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tbsp olive oil

– 1 tsp smoked paprika

– 1 tsp cajun seasoning

– Salt and pepper to taste

– Fresh parsley, chopped for garnish

**Directions:**

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sausage slices and cook until browned on both sides, about 5 minutes. Remove and set aside.
  3. In the same skillet, add the potatoes and cook until golden and crispy, about 10 minutes.
  4. Add the onion, bell pepper, and garlic to the skillet and sauté until the vegetables are soft, about 5 minutes.
  5. Return the sausage to the skillet, add the shrimp, smoked paprika, cajun seasoning, salt, and pepper. Cook until the shrimp are pink and cooked through, about 5 minutes.
  6. Remove from heat and garnish with chopped parsley before serving.
