Ingredients:

2 strip steaks (10-12 oz each)
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 lb baby potatoes, halved
1 red bell pepper, chopped ️
1 small onion, sliced
1 tbsp fresh parsley, chopped
2 tbsp butter

Preheat oven to 400°F (200°C). Toss potatoes, bell pepper, and onion with 1 tbsp olive oil, salt, and pepper. Roast for 25-30 minutes until golden.
Season steaks with salt, pepper, and garlic powder. Heat remaining oil in a skillet over high heat.
Sear steaks for 3-4 minutes per side for medium-rare, adding butter in the last minute to baste. ️
Remove steaks, let rest for 5 minutes, then slice.
Serve steaks alongside roasted veggies, garnished with parsley. ️✨
