Ingredients
4 boneless pork chops (about 1 inch thick)
2 tbsp olive oil
3 tbsp unsalted butter
4 garlic cloves (smashed)
2–3 sprigs fresh rosemary
2–3 sprigs fresh thyme
Salt & black pepper, to taste
Instructions
Pat pork chops dry with paper towels. Season both sides generously with salt and pepper.
Sear Pork Chops:
Heat olive oil in a skillet over medium-high heat. Sear pork chops for 3–4 minutes per side until golden brown.
Add Garlic & Herbs:
Reduce heat to medium. Add butter, smashed garlic, rosemary, and thyme to the skillet. Tilt the pan and spoon the melted herb butter over the pork chops repeatedly for 2–3 minutes.
Cook Through:
Continue cooking until internal temp reaches 145°F (63°C).
Rest & Serve:
Let pork chops rest for 5 minutes. Spoon more pan sauce on top before serving.
