Smoky Chipotle Grilled Shrimp with Chipotle Ranch Dipping Sauce

 

 

 

 

 

 

 

 

Ingredients

For the Shrimp:

1 pound large shrimp, peeled and deveined

1 ½ tbsp olive oil

1 tbsp lime juice (freshly squeezed)

1–2 chipotle peppers in adobo sauce, minced (adjust to heat preference)

1 tsp adobo sauce (from the chipotle can)

1 tsp smoked paprika

½ tsp garlic powder

½ tsp cumin

¼ tsp salt

¼ tsp black pepper

For the Chipotle Ranch Dipping Sauce:

½ cup ranch dressing (store-bought or homemade)

1 chipotle pepper in adobo sauce, minced

1 tsp adobo sauce

½ tsp lime juice

½ tsp honey (optional, for balance)

Garnish:

Fresh cilantro or parsley

Lime wedges for serving

 

Instructions

1. Marinate the shrimp:

In a medium bowl, combine olive oil, lime juice, minced chipotle peppers, adobo sauce, smoked paprika, garlic powder, cumin, salt, and black pepper.

Add shrimp and toss to coat evenly.

Cover and refrigerate for 15–30 minutes (don’t marinate longer than 1 hour — the acid can start to “cook” the shrimp).

 

2. Make the dipping sauce:

In a small bowl, mix ranch dressing, chipotle pepper, adobo sauce, lime juice, and honey.

Stir until smooth.

Chill until ready to serve.

 

3. Grill the shrimp:

Preheat grill (or grill pan) to medium-high heat.

Thread shrimp onto skewers (if using wooden skewers, soak them for 20 minutes first).

Grill shrimp for 2–3 minutes per side, until pink, slightly charred, and cooked through.

 

4. Serve:

Remove shrimp from grill and place on a platter.

Sprinkle with fresh cilantro and serve with lime wedges.

Serve the chipotle ranch dipping sauce on the side.
