1½ lb ground beef
1 cup breadcrumbs
1 small onion, finely diced
2 cloves garlic, minced
2 large eggs
½ cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp dried thyme
2 tbsp oil or butter
Brown Gravy
2 tbsp butter
2 tbsp all-purpose flour
2 cups beef broth
Salt and black pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, mix ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, paprika, and thyme until just combined.
Shape the mixture into a loaf and place it in a greased baking dish.
Bake for 50–60 minutes, until cooked through and lightly browned. Let rest 10 minutes before slicing.
For the gravy, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1–2 minutes until lightly golden.
Gradually whisk in beef broth and simmer until thick and smooth. Season with salt and pepper.
Serve thick slices of meatloaf topped generously with brown gravy, just like in the image with mashed potatoes or green beans on the side.
