Ingredients:
1 lb mixed seafood (shrimp, scallops, and squid)
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, minced
1 red bell pepper, diced
1 can (14.5 oz) diced tomatoes
2 cups fish broth (no alcohol)
1 tablespoon tomato paste
1 teaspoon red pepper flakes (adjust to taste)
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and black pepper to taste
1/4 cup chopped fresh parsley
Juice of 1 lemon
Directions:
Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper, sautéing until the onion becomes translucent.
Stir in diced tomatoes, fish broth, tomato paste, red pepper flakes, smoked paprika, and thyme. Bring to a simmer.
Add the mixed seafood to the pot. Simmer gently for 5-7 minutes or until the seafood is cooked through.
Season with salt and black pepper. Stir in lemon juice and fresh parsley just before serving.
Serve hot, ideally with crusty bread or over a bed of rice.
