Ingredients
2 cod steaks
1 large sweet potato
200 g of fresh spinach
1 tbsp. tablespoon of olive oil
1 tbsp. teaspoon of lemon juice
1 clove of garlic, chopped
Salt and pepper to taste
1 pinch of sweet paprika (optional)
Preparation :
Cook the sweet potatoes
Peel and cut the sweet potato into slices or cubes.
Steam it for 15 to 20 minutes until tender.
Cook the cod
Season the cod steaks with salt, pepper and a squeeze of lemon juice.
Steam them for about 10 minutes, until they are very tender and flake easily with a fork.
Prepare the spinach
In a pan, heat the olive oil.
Add the chopped garlic and brown it quickly.
Add the spinach and cook for 2 to 3 minutes until it reduces.
Salt and pepper lightly.
Prepare the plate
Arrange the sweet potato on the plate, add the spinach and delicately place the steamed cod on top.
Add a drizzle of olive oil and a pinch of sweet paprika to spice up the dish.
Tip: Serve with a little sauce made from yogurt and lemon for more freshness!
