Ingredients
4 cups diced pineapple (fresh or frozen)
2 cups strawberries, sliced
¼ cup frozen orange juice concentrate
1½ cups cream of coconut
1½ to 2 cups coconut rum
3–4 cups crushed or nugget ice
Optional: splash of pineapple juice or club soda
Garnish: pineapple wedges, strawberry slices, cocktail umbrellas
Instructions:
Blend pineapple, strawberries, orange juice, cream of coconut, and rum.
Add ice and blend until smooth.
Taste and tweak (more rum = more fun).
Pour into a chilled pitcher or punch bowl.
Garnish with fruit and umbrellas. Serve cold!
