1. Remove the steaks from the refrigerator 30 minutes before cooking to bring them to room temperature.
2. Rub both sides with olive oil, garlic powder, salt, and pepper.
3. Heat a cast-iron skillet or grill pan over high heat. Add a drizzle of olive oil.
4. Sear the steaks for 3-4 minutes per side for medium-rare, or to your desired doneness. Let the steaks rest for 5 minutes before serving.
5. Using kitchen shears, cut along the top shell of the lobster tails lengthwise and gently lift the meat over the shell.
6. Brush the meat with melted butter and sprinkle with smoked paprika, garlic powder, and salt.
7. Grill or broil the lobster tails for 6-8 minutes, or until the meat is opaque and lightly golden.
8. In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
9. Stir in the lemon juice, Dijon mustard, and parsley. Remove from heat.
10. Place each steak on a plate and top with a grilled lobster tail. Drizzle the butter sauce over both and garnish with extra parsley.
11. Serve with steamed vegetables, mashed potatoes, or rice pilaf for a complete gourmet experience!
