Sweet and Savory Glazed Sausage and Potatoes

 

 

 

 

 

 

 

 

 

Ingredients:

1 pound smoked sausage, sliced into 1/4-inch rounds

1 1/2 pounds baby potatoes (or red/gold potatoes), halved or quartered

1 medium onion, sliced (optional but adds great flavor)

2 tablespoons olive oil

2 tablespoons honey or brown sugar

1 tablespoon Dijon mustard (or yellow mustard for a milder taste)

2 tablespoons soy sauce

1 tablespoon balsamic vinegar (or apple cider vinegar)

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

Fresh parsley for garnish (optional)

 

Instructions:

1. Preheat oven to 400°F (200°C).2. Prep potatoes:
Toss the halved/quartered potatoes in 1 tablespoon of olive oil, salt, pepper, and paprika. Spread on a large baking sheet lined with foil or parchment paper. Roast for 20–25 minutes, or until starting to brown and soften.

3. Make the glaze:
In a small bowl, whisk together honey (or brown sugar), mustard, soy sauce, vinegar, garlic powder, and a pinch of pepper.

4. Add sausage and onion:
After the potatoes have roasted for 20–25 minutes, remove the pan from the oven. Add sliced sausage and onions to the pan. Drizzle the glaze over everything and toss to coat well.

5. Roast again:
Return to oven and roast for another 15–20 minutes, stirring halfway, until sausage is browned and glaze is bubbly and slightly thickened.

6. Serve:
Garnish with chopped parsley if desired. Serve hot!
