4. Pour in the broth and stir, scraping up any bits stuck to the pan. Let it reduce slightly for about 2 minutes.
5. Lower the heat and stir in the heavy cream, Dijon mustard, and thyme. Simmer for about 3–5 minutes until the sauce thickens. Season with salt and pepper to taste.
6. Return the steaks to the pan and spoon the sauce over them. Simmer for a minute or two to warm through.
