Ingredients:
1 link andouille or smoked sausage (cut into 1/2-inch pieces)
10-12 raw shrimp, deveined
1 tsp seafood seasoning
2 tbsp olive oil, plus 1 tsp to season shrimp
1/2 bell pepper, cut into strips
1/2 onion, sliced
1 cup zucchini, sliced (1/2-inch thick)
1 cup yellow squash, sliced (1/2-inch thick)
2 cloves garlic, minced
1/2 cup chicken broth
1 tsp Cajun seasoning
3 tbsp butter
Parsley, for garnish
Salt and pepper, to taste
Instructions:
1. Season the shrimp:
Toss shrimp with 1 tsp olive oil and 1 tsp seafood seasoning. Set aside.
2.Cook the sausage:
Heat a skillet over medium-high heat and brown the sausage pieces. Once browned, remove and set aside.
3.Cook the shrimp:
In the same skillet, cook the shrimp for 2-3 minutes, until they curl into a “C” shape. Remove and set aside.
4.Prepare the broth mixture:
In a small saucepan, melt 3 tbsp butter over medium heat.
Add minced garlic and cook until fragrant (about 1 minute).
Pour in 1/2 cup chicken broth and let it simmer. Set aside.
5.Cook the vegetables:
In the same skillet used for the sausage and shrimp, add onions and bell peppers. Sauté for 3-4 minutes.
Add zucchini and yellow squash, cooking for another 2-3 minutes.
6.Combine and finish:
Pour the broth mixture over the vegetables.
Return the sausage and shrimp to the skillet. Stir and let everything simmer together for 1-2 minutes.
7.Garnish and serve:
Adjust with salt and pepper if needed.
Garnish with parsley and serve.
