Ingredients:
3–4 large yellow or sweet onions
1 lb (450 g) ground beef or pork (or a mix)
1/2 cup breadcrumbs
1/2 cup shredded cheese (cheddar, mozzarella, etc.)
1 egg
1/4 cup chopped parsley or green onions
1–2 cloves garlic, minced
Salt & pepper to taste
BBQ seasoning (optional)
8–10 slices of bacon
BBQ sauce (optional)
Instructions:
1. Prep the Onions
Peel onions and cut them in half from top to bottom (stem to root).
Separate into layers—you’ll use the larger outer layers to form your “bomb shells.” Save the inner parts for another dish or chop them up for the filling.
2. Make the Filling
In a bowl, combine ground meat, breadcrumbs, cheese, egg, garlic, herbs, and seasoning. Mix well.
3. Assemble the Bombs
Take two similar-sized onion layers and stuff them with the meat mixture, then close them around the filling to form a ball.
4. Wrap in Bacon
Wrap each onion bomb with 2–3 slices of bacon, securing with toothpicks if needed.
5. Cook
Grill/Smoker: 350°F (175°C) for 45–60 minutes, or until internal temp is 165°F (74°C).
Oven: Same temp and time as above.
Brush with BBQ sauce during the last 10 minutes if desired.
6. Rest & Serve
Let rest for 5 minutes. Serve with extra BBQ sauce or your favorite
