2 beef fillets (approx 200g each)

600g of potatoes

200g of carrots, cut into pieces

100g of cherry tomatoes, cut in half

1 tablespoon of butter.

2 tablespoons of olive oil

2 sprouts of fresh rosemary

1 splinter of fresh thyme

100 ml of beef broth

1 tablespoon of balsamic vinegar

Salt and pepper to taste

1 clove garlic, finely chopped

2 tablespoons of sour cream (optional for puree)

1 tablespoon of honey (optional)

Prepare the mashed potatoes:

Peel the potatoes and cut them into equal chunks. Cook them in a large saucepan of salt water for about 15-20 minutes or until tender.
