Ingredients
Produce
- 1 Avocado
- 2 tbsp Cilantro and/or parsley
- 1 Cucumber
- 1 Green onion
Condiments
- 1 tbsp Lemon juice
- 1/4 cup Remoulade sauce
Baking & Spices
- 1 tbsp Creole seasoning
- 1 Salt and cayenne
Oils & Vinegars
- 1 tbsp Oil
Other
- 1 pound shrimp, peeled and deviened
Instructions
Start by seasoning the shrimp. In a bowl, toss the peeled and deveined shrimp with creole seasoning, salt, and cayenne pepper to taste until evenly coated.
Heat oil in a skillet over medium-high heat. Once the oil is hot, add the seasoned shrimp to the skillet.
Cook the shrimp for 2-3 minutes on each side, or until they are cooked through and have a nice blackened exterior. Make sure not to overcrowd the skillet; you may need to cook the shrimp in batches depending on the size of your skillet.
While the shrimp are cooking, prepare the avocado and cucumber. Cut the avocado into slices or chunks, and slice the cucumber into rounds.
Once the shrimp are cooked, assemble the bites. Place a slice of avocado on top of each cucumber round, followed by a blackened shrimp.
Drizzle a little lemon juice over the assembled bites for a fresh kick.
Garnish with chopped cilantro and/or parsley, and thinly sliced green onions for added flavor and color.
Serve the Blackened Shrimp Avocado Cucumber Bites with remoulade sauce on the side for dipping.
Enjoy these delicious and flavorful appetizers as a light and refreshing snack or party appetizer!❤️
