1 tbsp olive oil
Salt and black pepper, to taste
For the Topping:
2 cups fresh spinach, sautéed
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
For the Garlic Butter:
2 tbsp melted butter
2 cloves garlic, minced
1 tsp lemon juice
1/2 tsp dried parsley
Instructions:
1. Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper or foil.
2. Season the salmon fillets with salt and black pepper, then arrange them in the prepared baking dish.
3. In a small bowl, combine the melted butter, minced garlic, lemon juice, and dried parsley. Brush the mixture generously over each fillet.
4. Layer the sautéed spinach on top of the salmon, then evenly sprinkle the mozzarella and Parmesan cheeses.
5. Bake for 12-15 minutes, or until the salmon is fully cooked and the cheese is bubbly and golden.
6. Garnish with fresh parsley and serve with lemon wedges on the side.
