Creole Steak and Shrimp Quesadillas

 

 

 

 

 

 

Ingredients:

1 lb flank steak (or sirloin), thinly sliced
1/2 lb shrimp (peeled and deveined)
1 tbsp olive oil
1 tsp Creole seasoning (divided)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/2 cup bell pepper (diced)
1/2 cup red onion (diced)
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
4 large flour tortillas
2 tbsp butter (for grilling)
1/4 cup fresh cilantro (chopped, for garnish)
Sour cream or guacamole (for dipping)

Season the Meat and Shrimp:

In a bowl, combine the flank steak, shrimp, 1/2 tsp Creole seasoning, garlic powder, onion powder, and smoked paprika. Toss well to coat evenly.
Cook the Steak and Shrimp:

Heat olive oil in a large skillet over medium-high heat. Add the sliced steak and cook for 3-4 minutes until browned and cooked through. Remove the steak from the pan and set aside.
In the same skillet, add the shrimp and cook for 2-3 minutes per side, until they turn pink and opaque. Remove and set aside with the steak.
Add the diced bell pepper and red onion to the skillet and sauté for 2-3 minutes until softened.
Assemble the Quesadillas:

Lay the tortillas flat on a clean surface. On one half of each tortilla, spread a layer of shredded Monterey Jack and cheddar cheese. Top with a portion of the cooked steak, shrimp, sautéed bell pepper and onion, and a little more cheese. Fold the tortilla in half to create a quesadilla.
Grill the Quesadillas:

Heat a nonstick skillet or griddle over medium heat. Melt 1 tbsp of butter in the pan. Place the quesadillas in the skillet, cooking 2-3 minutes on each side, or until golden brown and the cheese is melted inside. You may need to cook the quesadillas in batches, adding more butter to the pan as needed.
Serve:

Remove the quesadillas from the pan and slice them into wedges. Garnish with fresh cilantro and serve with sour cream or guacamole on the side.
