Ingredients:
4 cod fillets (about 6 ounces each)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1 teaspoon paprika
1/2 teaspoon garlic powder
Olive oil spray (or any cooking spray)
Directions:
Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
Set up three shallow bowls for the breading process:
In the first bowl, place the all-purpose flour.
In the second bowl, beat the eggs.
In the third bowl, mix the panko breadcrumbs with paprika and garlic powder.
Dredge each cod fillet in flour, shaking off any excess. Dip next into the beaten eggs, and finally coat well with the seasoned breadcrumbs.
Preheat your air fryer to 400°F (200°C). Spray the air fryer basket with olive oil spray to prevent sticking.
Place the breaded cod fillets in the basket. Do not overcrowd; cook in batches if needed. Spray the tops of the cod fillets lightly with olive oil spray.
Cook for 10-12 minutes, flipping halfway through and spraying lightly with more oil if the fillets look dry. The cod should be golden brown and cooked through.
Serve immediately, optionally with lemon wedges and tartar sauce.
