Crispy Fried Chicken




– 4 chicken breasts or tenders

– 1 cup buttermilk

– 2 cups all-purpose flour

– 1 tablespoon paprika

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon cayenne pepper (optional for heat)

– Salt and black pepper to taste

– Oil for frying


  1. Season the chicken pieces with salt and black pepper.
  2. Place the chicken in a bowl and pour the buttermilk over it. Ensure all pieces are coated. Marinate in the refrigerator for at least 30 minutes (or overnight for best results).
  3. In a separate bowl, combine the flour with paprika, garlic powder, onion powder, cayenne pepper, and a bit more salt and pepper.
  4. Heat oil in a deep fryer or large pot to 350°F (175°C).
  5. Take each piece of chicken out of the buttermilk, let excess drip off, then dredge thoroughly in the flour mixture.
  6. Fry the chicken in batches until golden brown and cooked through, about 7-10 minutes for tenders or 10-15 minutes for breasts, depending on size.
  7. Remove the chicken and let it drain on a wire rack or paper towels.

### Seasoned Collard Greens


– 1 pound collard greens, cleaned and chopped

– 3 cups chicken broth

– 1 smoked turkey wing or ham hock

– 1 onion, diced

– 2 cloves garlic, minced

– 1 teaspoon red pepper flakes

– Salt and black pepper to taste

– 1 tablespoon apple cider vinegar


  1. In a large pot, bring the chicken broth to a boil. Add the smoked turkey wing or ham hock and simmer for about 1 hour to infuse the broth with flavor.
  2. Add the diced onion, garlic, and red pepper flakes to the pot and sauté until the onions are translucent.
  3. Add the collard greens to the pot and season with salt and black pepper. Simmer until the greens are tender, about 45-60 minutes.
  4. Stir in the apple cider vinegar and adjust seasoning if necessary.
