Crockpot Brown Sugar Balsamic Glazed Pork Tenderloin

 

 

 

 

 

 

 

 

Ingredients:

2 pounds pork tenderloin

1 teaspoon ground black pepper

1 teaspoon salt

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried thyme or rosemary

1/2 cup brown sugar (light or dark)

1/4 cup balsamic vinegar

1 tablespoon soy sauce

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 tablespoon cornstarch + 1 tablespoon cold water (optional, for thickening glaze)

 

Instructions:

1. Season the pork:

Rub the tenderloin with salt, pepper, garlic powder, onion powder, and dried herbs.

 

2. Make the glaze:

In a small bowl, mix together brown sugar, balsamic vinegar, soy sauce, Dijon mustard, and minced garlic.

 

3. Add to crockpot:

Place the pork tenderloin in the slow cooker. Pour the glaze over it, making sure it’s coated.

 

4. Cook:

Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the pork is tender and cooked through (internal temp should be 145°F / 63°C).

 

5. Thicken the glaze (optional):

Remove the pork and let it rest.

Pour the juices into a saucepan. Bring to a simmer.

Mix 1 tbsp cornstarch with 1 tbsp cold water, stir into the glaze, and simmer for a few minutes until thickened.

 

6. Serve:

Slice the pork and drizzle the glaze over the top. Perfect with mashed potatoes, roasted veggies, or rice.
