Ingredients:
– Baby ribs: 500g
– Ginger: a few slices
– Scallions: 2 stalks (white part)
– Cooking wine (or white wine): 1 tablespoon
– Shallots: 1 bulb (minced)
– Garlic: 5 cloves (minced)
– Chili pepper/hot pepper: to taste (minced)
– Chili powder, BBQ powder, five-spice powder, pepper powder: 1 teaspoon each
– Soy sauce: 2 tablespoons
– Salt, sugar: a little of each
– Cooking oil
How to make:
1. Boil the ribs with wine, ginger, scallion for about 30 minutes to remove odor and soften. Remove and drain, pat dry with paper towels.
2. Deep fry the ribs until golden brown, then drain the oil.
3. Fry the shallots, garlic, and chili until fragrant. Then add the dry spices (chili powder, five-spice powder, BBQ powder, pepper) and stir well.
4. Add the fried ribs, add soy sauce, a little salt and sugar. Finally, add the green onion tips and stir well until the ribs are evenly coated with sauce.
5. Serve on a plate, sprinkle with green onions if desired.
Spicy and aromatic, the ribs are crispy on the outside, soft and sweet on the inside – great as a snack or with white rice!
