1. Prep the Potatoes: In a large pot, bring water to a boil. Add the chopped potatoes along with a pinch of salt. Cook for 15 to 20 minutes until fork-tender. Drain and return the potatoes to the pot. Mash until smooth. Stir in heavy cream, milk, sour cream, butter, salt, and pepper until creamy. Mix in Parmesan cheese and keep warm.
2. Sear the Steaks: Season both sides of the steaks generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add steaks and sear for about 3 to 4 minutes on each side for medium-rare, adjusting for your preferred doneness. Remove and let them rest.
3. Create Garlic Butter: In the same skillet, melt the remaining butter. Add minced garlic, rosemary, and thyme. Sauté for 1 to 2 minutes until fragrant. Spoon this delicious garlic butter over the steaks.
4. Serve It Up: Plate the steaks with a generous scoop of creamy mashed potatoes. Garnish with fresh parsley and drizzle with the savory garlic butter sauce. Enjoy your culinary creation!
