Grilled Halloumi Avocado Toast

 

 

 

 

 

 

 

 

 

 

Ingredients:

2 slices rustic sourdough or whole grain bread, toasted

1 ripe avocado, mashed

Juice of 1/2 lemon

Salt & black pepper, to taste

100g halloumi cheese, sliced

6โ€“8 cherry tomatoes, halved

Olive oil, for grilling

Optional: chopped parsley, chili flakes

Instructions:

1. Prepare the avocado spread:
In a bowl, mash the avocado with the lemon juice, salt, and pepper. Set aside.

2. Grill the halloumi:
Heat a grill pan or non-stick skillet over medium heat. Lightly brush with olive oil.
Grill the halloumi slices for about 1โ€“2 minutes on each side, until golden brown and crispy.

3. Grill the cherry tomatoes (optional):
Add the halved cherry tomatoes to the pan, cut side down, and cook for 2โ€“3 minutes until slightly softened and charred.

4. Assemble the toast:
Spread the mashed avocado generously over the toasted bread slices.
Top with grilled halloumi and cherry tomatoes.

5. Finish & serve:
Drizzle with a touch of olive oil, sprinkle with chopped parsley and chili flakes if using.
Serve immediately.
