Ingredients:
2 slices rustic sourdough or whole grain bread, toasted
1 ripe avocado, mashed
Juice of 1/2 lemon
Salt & black pepper, to taste
100g halloumi cheese, sliced
6โ8 cherry tomatoes, halved
Olive oil, for grilling
Optional: chopped parsley, chili flakes
Instructions:
1. Prepare the avocado spread:
In a bowl, mash the avocado with the lemon juice, salt, and pepper. Set aside.
2. Grill the halloumi:
Heat a grill pan or non-stick skillet over medium heat. Lightly brush with olive oil.
Grill the halloumi slices for about 1โ2 minutes on each side, until golden brown and crispy.
3. Grill the cherry tomatoes (optional):
Add the halved cherry tomatoes to the pan, cut side down, and cook for 2โ3 minutes until slightly softened and charred.
4. Assemble the toast:
Spread the mashed avocado generously over the toasted bread slices.
Top with grilled halloumi and cherry tomatoes.
5. Finish & serve:
Drizzle with a touch of olive oil, sprinkle with chopped parsley and chili flakes if using.
Serve immediately.
