1 beef rib roast
½ cup unsalted butter, softened
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
4 cloves garlic, minced

Instructions
Preheat your smoker to 225°F.
In a bowl, mix the softened butter with rosemary, thyme, garlic, salt, pepper, and Dijon mustard until well combined.
Rub the herb butter mixture all over the beef rib roast, covering it evenly.
Place the roast in the smoker and cook until the internal temperature reaches your desired doneness, about 4-5 hours for medium rare.
Remove the roast from the smoker and let it rest for at least 15 minutes before slicing.
