1 lb Italian sausage (mild or spicy), sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper flakes (optional)
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tablespoon olive oil
1 cup cooked rice or pasta (optional, for serving)

Preheat Oven: Set to 375°F (190°C) and grease a baking dish.
Cook the Sausage: In a skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
Sauté the Vegetables: In the same skillet, add bell peppers, onion, and garlic. Sauté for 3-4 minutes until softened.
Mix & Assemble: In a bowl, combine cooked sausage, sautéed vegetables, diced tomatoes, oregano, basil, salt, pepper, and red pepper flakes. Transfer mixture to the baking dish.
Add Cheese & Bake: Sprinkle mozzarella and Parmesan cheese over the top. Bake for 20-25 minutes until cheese is bubbly and golden.
Serve: Enjoy as is or over rice/pasta.
