Ingredients
1 crown roast of lamb
2 tablespoons olive oil
4 cloves garlic, minced
2 teaspoons fresh rosemary, chopped
2 teaspoons fresh thyme, chopped
1 teaspoon salt
½ teaspoon black pepper
½ cup lamb stock
Instructions
Preheat your oven to 350°F (175°C).
In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
Rub the mixture all over the crown roast.
Place the roast in a roasting pan and pour lamb stock into the pan.
Roast the lamb for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C).
Remove from oven and let it rest for 15 minutes before carving.
Notes
For best results, let the lamb sit at room temperature for 30 minutes before cooking.
