Ingredients:
* 2 lbs ground chicken
* 1 cup grated Parmesan cheese
* 1/2 cup panko breadcrumbs
* 1/4 cup milk
* 2 large eggs
* 4 cloves garlic, minced
* 2 tablespoons chopped fresh parsley (or 1 tbsp dried)
* 1 teaspoon onion powder
* 1 teaspoon Italian seasoning
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
For the Glaze:
* 1/4 cup ketchup
* 2 tablespoons honey
* 1 tablespoon Worcestershire sauce
* 1/2 teaspoon garlic powder
Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
2. Prepare the meatloaf mixture:
In a large mixing bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, milk, eggs, garlic, parsley, onion powder, Italian seasoning, salt, and pepper. Mix until just combined—do not overmix.
3. Shape and bake:
Transfer the mixture to the prepared loaf pan and shape into a loaf. Bake for 30 minutes.
4. Make the glaze:
While the meatloaf is baking, stir together the ketchup, honey, Worcestershire sauce, and garlic powder in a small bowl.
5. Glaze and finish baking:
After 30 minutes, remove meatloaf from the oven and spread the glaze on top. Return to oven and bake for another 15–20 minutes, or until internal temperature reaches 165°F (74°C).
6. Rest and serve:
Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley and serve with mashed potatoes or roasted vegetables.
Tips:
* Use a meat thermometer for best results.
* Can be made ahead and reheated; leftovers taste great!
* Swap panko for crushed Ritz or regular breadcrumbs for a twist.
